Welcome to the Firefly Hollow Taproom!  If you’re looking to visit us here are a few things we’d like you to know.

Finding us can be a bit tricky.  We’re located on the side of a relatively steep hill.  If you’re going up, it’s the first left after the railroad tracks.  If you’re coming down the hill we’re the last right before the tracks.  You’ll be looking down a narrowing alleyway along the lower end of an old mill building.  If you look carefully about 10 feet up, you’ll see our sign inconspicuously hanging from the corner of the building.   This is your cue to turn  If you’re inclination is to question whether you’re going the right way, then you probably are.  Our driveway is a couple hundred yards of industrial alleyway which opens up into a large parking lot in the back.    Just have faith that we’re at the end of the road waiting to serve you a glass of fresh ale.  In case you missed our address – it’s 139 Center Street, Bristol, CT

We don’t serve food, but we’d love for you to bring in your own munchies.  We typically serve fresh made pretzels baked and delivered daily by the Harvest Bakery, but these are on a first come first serve basis.  We often collaborate with local food trucks as well, and we’re always working hard to have something available.  If you’re wondering if we have a truck outside, check the events page or give us a jingle at 860.845.8977.

We do not have waitstaff in a traditional sense.  If you come to the taproom and sit down, don’t expect someone to come wait on you.  All beverages are ordered and served at the service register at the bar.  That said, we are here to serve you.  If  something needs attention and it’s gone out of our notice, please let the bar staff know and we’ll be more than glad to help.

On Growlers and Squealers:  For those who don’t already know, a growler is a 2L jug designed to take fresh draft beer home from the brewery, and the squealer is the 1L size.  The growler will pour four full 16oz pints, while the squealer will pour two.  If you’re coming to the brewery for a few beers and a growler fill, we’d encourage you to leave your glassware with the bar staff to be filled while you relax with a pint.  Additionally, growlers and squealers are for off site consumption only, and if you’re buying a new piece of glassware from us we charge $5.00 for the glassware on its first fill.  When your growler or squealer is empty, we strongly encourage a double rinse with warm water, and to leave the cap off.  This will ensure the jug is clean and ready to be filled when you bring it back to the brewery for service.

The Beer: One of my favorite things about our taproom model is our ability to keep rolling out new and exciting beers.  When you come to the taproom we hope to always have something new and fresh in the works.  Some of our beers are destined for greatness, and some may never again see the light of day.  If you came down and had a beer you loved then please let us know, as this can mean the difference between bringing a beer back every few months or once a year.  If there is one thing you can count on, though, it’s always being able to get a fresh pint of our Toadstool Oat Stout.

Afflatus Copper Ale

A pleasantly mellow copper ale with plenty of body and malt presence. Flavors of caramel and toast with hints of raisin define the malt profile, while a sprinkling of Mt. Hood hops delivers just a hint of flowers in the nose.

D20 Session IPA

This session IPA is brewed solely with Oceanic hops, and is packed with flavors of tropical fruit, citrus, and spice.  Look for hints of pineapple and coriander with a big blast of lemon lime and bitter citrus pith finish.  This IPA showcases the best of Topaz, Motueka, and Galaxy hops.

Wombat Pale Ale

Avena Sativa

Avena Sativa is a golden hued ale brewed with loads of rolled and toasted oats.  This unique brew is full bodied and creamy with aromas of guava and apricot, biscuits, and lightly toasted oats.  Hops are forward in the flavor but fleeting.  The finish lingers with a pleasantly balanced bitterness and a lasting impression of toasty malt and oats.  We hope you enjoy this one of a kind brew!

3.2% – A classic English Dark Mild. Flavors of bakers chocolate, coffee, and caramels with a mild bitterness.

Bada Boom


You want an intense, roasty, bitter, hoppy, palate destroying- monster of a stout?  Bada-Boom is for you!  This full bodied brew is loaded with big-time roasted flavors with robust chocolatey and nutty impressions.  Hop flavors of dank pine resin and subtle tones of tropical fruit add complexity and intrigue to this explosive stout.  This recipe comes from Firefly Hollow Assistant Brewer Mike Holland.   MIke’s been with us for about a year, and put this recipe together to celebrate his time with us.  Cheers!

Big Brass Bock

This gold colored strong lager is full bodied and malty with a distinct toasted marshmallow profile. Bold flavors of caramel, toast, and melanoidin are complemented by subtle hints of pepper from the Mt. Hood hop addition. Lagered for over six weeks for a clean and crystal clear finished product.

In Bottles: Choconaut Imperial Porter

Dark, full bodied, and seductive, this Imperial Porter is brewed with loads of chocolate malt, roasted barley, black, and crystal malts. Flavors of creamy chocolate, coffee, and dark caramel blend together with the subtle nuttiness of the Ecuadorian Cacao nibs the beer is aged over.

In Bottles: Collaboration 320

Collaboration 320 is the result of over 2 years of development with J.Rene Coffee Roasters in West Hartford, CT.  This bold and structured Red Ale was brewed with a blend of Brazilian and Ethiopian coffees and aged for 8 months in Caribbean Rum barrels.  Big flavors of caramelized malts and toasted sugars layer into subtle coffees and round out with vanilla and rummy oak.  7.8% ABV

This 9% semi-sweet English inspired barleywine boasts big malt flavors of biscuit, caramel and toffee. Be sure to grab a bottle to enjoy now and one to enjoy in the distant future. Bottles are $9/bottle and limit of one case per person. We find that Twinkler gets even better with age!

Bourbon Barrel Aged Toadstool Oat Stout-Nitro

Super smooth and velvety. This oat stout delivers a subtle array of dark and roasted flavors without a long lasting bitterness. Look for flavors of dark chocolate, deep roasted coffee, almond, and coconut. This stout is a gateway into the world of complex malt forward beers.

A rich American Style Brown Ale with a forward and complex malt profile. Flavors of toasted malt, tree nuts, caramel, toffee, and hints of roast come together for a particularly hearty brew. A firm bitterness supports the malt profile and accentuates some of the dark malt and coffee tones. A small addition of Chinook hops adds a touch of resin to bring all the flavors together.

After Burner Pale Ale

The After Burner was a bit of an experiment for us. This hoppy pale ale was brewed with CO2 extracted hop resin and cooled whirlpool hop additions. Using loads of El Dorado, Citra and Amarillo hops, we’ve harnessed flavors of melon, strawberry, and citrus with hints of toast and toffee-like malt impressions.

Caboose Cask

Caboose English Ale

A deliciously quaffable English Bitter! Delicate notes of grainy Maris Otter base malt with an herbal hop impression from German Opal. Bright and delicately malty with pleasantly balanced hoppiness. This one speaks for itself.

What you have here is the culmination of over a half years experimentation and learning. Charm Quark is the newest addition to our Subatomic IPA series and features a venerable blend of Mosaic, Citra, El Dorado and Amarillo hops. It’s soft and doughy malt profile buoy big fruity hop flavors of melon, citrus, tropical fruits and an apricot finish. Enjoy!

In Cans: H+ Sour Ale

Crisp, tart, and refreshing. This sour ale was conditioned for three days with lactic acid producing microbes, and then brewed with a hefty addition of lemon peel and a touch of coriander. The natural sourness accentuates the bright citrus and lemon impressions, and the coriander adds a pleasant hint of spice. Enjoy the lemonade!

This resiny American IPA blends both new age American Hops with experimental German varieties. Look for up front flavors of soft stone fruits, mango, tangerine, and citrus. The beer finishes dry with lasting herbal flavors reminiscent of gunpowder green tea, pine resin, and black pepper spice. By blending hop varieties from two very distinct growing regions, we’re able to achieve loads of complexity and subtle flavors.

Captain Quark IIPA

Captain Quark is the heaviest hitter in the Quark family.  Heavily dry hopped with Amarillo, El Dorado, Citra, CT grown Cascade, and Nelson Sauvin, this beer shows massive complexity, full chewy body, and reserved bitterness.  Large amounts of malted and flaked wheat provide a soft, doughy stage on which the hops can perform.  Look for lots of citrus – lemon, lime, grapefruit, orange; honeydew, and white grapes.

Cone Flakes IIPA
We call it Cone Flakes because you might as well have poured hops into a bowl, added beer, and used a spoon.   Cone Flakes is brewed with 6 hop varieties strategically added during the brewing process to provide a maelstrom of fruity and herbal hop tones.  Look for flavors of mango, ruby red grapefruit, melon, passionfruit, thyme/herbs, black pepper, lime, and pine.  Malt not forgotten, a base of UK pale malt and German Vienna provide just enough body and character to keep the bitterness and ABV from getting the best of the flavor!

This beautiful copper hued ale was inspired by the rich and malty alt-biers of Germany, the full bodied ales of the UK, and the reckless abandon of American creativity. This brew showcases rich caramel and toasted malts for a wonderfully complex malt structure, and just a touch of American grown Mt. Hood hops for bitterness and balance.

Cricket IPA

The Cricket IPA features one of my favorite hop blends!  The peachy, apricot, tangerine of Palisade; Simcoe’s sharp pine and ruby red grapefruit; The dank stank of CTZ; and the flowery-black pepper of Dr. Rudi!  The Cricket is pleasantly hoppy with malty undertones of Vienna and American Pale.  In one word – Delightful.

Emily’s Porter Nitro

Emily’s Choconut Porter
This beer is brewed in honor of our wonderful bartender Emily…whose love of chocolate and coconuts has grown to insatiable levels.  We developed this beer for one reason:  We had to.
Emily snuck in one night and dumped 10 pounds of Ecuadorian Cacao nibs and 5 pounds of roasted coconut into our batch of porter.  The end result of this heinous tampering is a delicious brown porter with the nutty notes of toasted coconut, the rich chocolatey tones of the cacao nibs, and the gentle roasty, caramel malt tones from our malt blend.

Fire Water Rye

A Collaboration between Firefly Hollow and Hog River Brewing
Fire Water Rye is the culmination of a long professional relationship between Firefly Hollow Brewer Dana Bourque and long time Connecticut Brewer Ben Braddock.  Dana and Ben began working together at the Thomas Hooker Brewing company in 2010, and their friendship and professional respect for each other has blossomed into the beautiful red ale ale before you.  Ben is in the process of opening Hog River Brewing Co. in Hartford CT and is currently brewing some of CT’s best at the Willimantic Brewing Company.

The Fire Water Rye is a malty and robust Red Ale brewed with loads of flaked and malted rye, Munich malts, and a hint of beechwood smoked barley.  We wanted to capture the rich sweet malt flavors of dark Munich malts, the slick spice from a combination of flaked and malted rye, and a hint of spice from central European Sybilla hops.  We also incorporated a hint of beechwood smoked malt to capture the essence of the season.  The beer is rich and toasty, with hints of smoke and spice, and a pleasant lingering malt finish.  Cheers!

H+ Tart and Hoppy

The newest addition to the H+ family.  This kettle soured wheat beer has been dry hopped with Equinox, Amarillo, and El Dorado.  Look for flavors of ginger, lemon, grapefruit, kiwi, and melon with very little bitterness and a moderate lactic tang.  Doughy wheat malt comes through on the finish to round out the experience.

Imperial Choconaut Porter

 
Dark, full bodied, and seductive, this Imperial Porter is brewed with loads of chocolate malt, roasted barley, black, and crystal malts.   Flavors of creamy chocolate, coffee, and dark caramel blend together with the subtle nuttiness of the Ecuadorian Cacao nibs the beer is aged over.  We will be releasing this beer in bottles soon, so keep an eye out for the release date.  In the meantime, enjoy it on tap.

Infrared Red Ale

Toasty malt with hints of caramel and a dry slightly roasted bitterness. Hop flavors are slightly piney with hints of citrus. Bitterness is low and contributes to an amazingly drinkable session red ale. Brewed with Morris, CT grown Chinook Hops.

Innuendo Blonde Ale

A classic blonde ale that lets base malt shine. Crisp Best Pale malt and a touch of flaked wheat combine for a simple yet delicious full and chewy blonde ale.

Ionic Wheat

A Belgian inspired wheat beer brewed with a combination of European hops and our Saison yeast. Flavors of lime, candied ginger, dried citrus peel, pineapple, and anisette back up the chewy wheat malt profile. This fruity and easily drinkable brew is the perfect choice for summer time!

Lil’ Troll SiPA

Big flavors of herbs, pine, and hints of citrus and tropical fruit compliment lightly toasty malt notes and a mouth watering back-end bitternes. A lower ABV makes this Session IPA the perfect hop-head summer brew without sacrificing a drop of flavor. Super hoppy and perfectly bitter.

The Lizard Breath’s massively hoppy profile tells the quintessential story of American IPA.  This brew showcases the bold and dank characteristics of Columbus and Simcoe hops, and is balanced by the soft citrus and floral nature of Palisade and Mandarina Bavaria.  Look for big impressions of ruby red grapefruit, pine, and earthy resin with hints of tangerine and herbs.  A full and toasty malt presence provides a soft balance while accentuating big, bright hop flavors.   This brew is  clean with just enough body and sweetness to balance the hoppy blast that is the Lizard’s Breath.

Methuselah English Old Ale

Richly malty, full bodied, and lightly carbonated.  This rendition of an English Old Ale boasts a full range of malt flavors ranging from toffee and caramel to dried fruits, figs, dates, and nuts.  After fermentation the beer was aged for 9 days over dark toasted american oak contributing just the slightest hint of earthy woodiness and bourbon notes.  This one is to get us through winter!

Rhyme – Rye Mild

A sessionable and malty mild ale brewed with a touch of rye and wheat.  CaraRye and Dark Munich malts provide a foundation for a toasty, spicy, and light caramel malt impression.  This easy drinker packs loads of malt complexity into a simple 4.5% beer while retaining a medium body and slick mouthfeel.  Rhyme is also the first part of a time investment.  We’ve split the batch and are aging the other half in our whiskey and wine barrels with the intent of developing a lightly sour and refreshing brew.  Look for barrel aged Reason next spring!

The Hollow Porter

Rich, dark, and delicious. This porter contains copious amounts of chocolate, caramel, and roasted malts to give the impression of sweet toffee, caramel, chocolate, and coffee. The addition of a caramelized Oat malt also gives a nutty impression unique to this grain. This is the first half of our porter release. On February 8th we release Emily’s Choconut Porter, which takes The Hollow Porter and adds Organic Ecuadorian Cocao nibs and locally roasted coconut!

The Wood Drip is the only beer brewed by Firefly Hollow that technically contains no water! The entire batch was brewed using the maple sap from the Pierce Sugar Shack in Hebron, CT. We looked to pair the unmistakable flavors of maple sugar with toasted and caramelized UK and Belgian malts. Look for big toasty and caramelized malt aroma with hints of maple, and the long definitive finish of maple candy.
